Mix water, yeast, and one teaspoon of sugar in a small bowl. Note: If the water is too hot, it will kill the yeast and the bread will not rise. Let yeast activate for about five minutes. While waiting for the yeast, place eight cups of sifted flour, one cup of sugar, and Crisco into a large mixing bowl. Mix together. Add water/yeast/sugar mixture and knead together. If the dough is not coming together, add a bit more water. If the dough is too sticky, add a bit more flour.
Let dough rise for about four hours. It is best to keep in a warm place (like near the oven with a turkey in it, but not on direct heat) and covered with a wet cloth. Knead again, using remaining flour, and form into individual rolls. Note: over-kneading will result in hard rolls; handle the rolls as little as possible.
Let rise on a cookie sheet for another four hours. Again, keep in a warm place and covered with a wet cloth. Preheat oven to 350 degrees. Bake at 350 degrees for 15 to 20 minutes, until golden brown. |

Notes: My downstairs neighbor taught me to make this bread when I was about four years old. We would make it from scratch every Christmas together. It was her family’s recipe she brought from the islands. This is the best roll to eat with a leftover turkey, cranberry, and stuffing sandwich.
