Ingredients:  
1 cup each of the following raw veggies:
Celery, bias cut
Cauiflower, separated into florets
Broccoli, separated into florets
Tomatoes, cut into thin wedges, or 1 small basket cherry tomatoes
Ripe olives (1 small can, sliced)
Fresh mushrooms, sliced
1 red bell pepper, cut into strips
1 small zucchini, diced

Marinade:
1 8 ounce bottle of zesty Italian dressing
1 package powdered Italian dressing mix
1/4 cup tarragon vinegar or raspberry vinegar
1/3 cup cold water

Directions:

Note: this recipe requires refrigeration.

Mix marinade ingredients together and pour over vegetables. Marinate at least three hours or overnight.

Add a garnish of chopped cashews right before serving.
