2 lbs of roma tomatoes ( or any ripe tomato of your choice)
1 clove garlic, minced
5 basil leaves, rolled and sliced into strips
2 tsp balsamic vinegar
salt and pepper
For the bread
1/2 loaf of French bread
softened butter for spreading on bread
garlic salt

Directions:
Directions:
1. Preheat the oven to 350 degrees.
2. Quarter your tomatoes, pull out the seeds and pulp from the middle with your fingers and discard.
3. Chop the tomatoes up into small, bite size pieces.
4. Transfer the tomatoes in a medium bowl and add in the garlic, basil and balsamic vinegar. Add salt and pepper to taste.
5. Store in fridge until the bread is ready.
6. Slice your loaf of bread into about 11/2 inch wide pieces.
7. Spread the butter on both side and sprinkle with a bit of garlic salt. Place on baking sheet and bake for about 10 min.
8. Remove the bread from the oven. flip bread and bake for another 5 min or so.
9. When bread is done and slightly cool, spoon the tomato mixture onto the bread, top with a bit of grated parmesan and a bit of basil.
