2 sticks butter or margarine, softened (do not melt)
1½ cups sugar
2 teaspoons vanilla
2 squares unsweetened chocolate or ¼ cup cocoa
4 eggs
1 carton whipping cream (not whipped--for topping)
toasted almonds (for garnish)
1 8x8 inch graham cracker crust (I use the recipe on Honey Graham box)

Note: If you use cocoa Do Not Melt Anything!!!
Place butter and sugar in mixing bowl and beat until creamy. Melt chocolate in microwave and add to butter/sugar mixture. Beat until well mixed. Add the 4 eggs, one at a time beating 5 minutes after each addition. (After making this for years, I finally added all 4 at once and it turned out just as creamy.) It is important to beat the full 20 minutes as this will make the mixture very creamy and will remove any sugar granules. Scrape sides of mixing bowl to incorporate the sugar granules. They should all be dissolved after 20 minutes. After 20 minutes, add the vanilla and beat another 30 seconds to mix. Pour into 8"x8" pie pan.

NOTE: You can double this for a crowd and put into a 9"x13" pan.

TO SERVE: Cut in pie shape or squares. Beat the whipping cream and dollop on top if pie. Sprinkle the top with shredded semisweet chocolate. Sprinkle with toasted almonds and place a cherry on top.

Makes a beautiful dessert for showers, etc. I bought the dessert size paper doilies to place the dessert on.
