4 oz. Mexican, reqular, or red lentils
2 medium onions, cut in rings
1/4 cup olive oil
3 cloves garlic
3/4 cup dry sac sherry

Directions:
Directions:
In heavy stock pot, saute onion and garlic in olive oil until onions are translucent. Add 4 cups water and lentiils. Cover and cook on medium, stir often. When water is level with the lentils, remve from stove. Add sherry and mix together. Reduce heat to low and cook slowly until the lentils are soft about 30 minutes. Stir often to avoid burning.

Options: Add 1/2 pound cooked, ground pork or chorizo or add 1 jalapeno (seeded and chopped) and 1/4 teaspon ground pepper. One or the other, not both.

Serve as a side dish or main dish if you add the meat.

Red lentils are not generally used in Mexico, but they are beautiful and add great color to a meal. Your guests will really enjoy these unique lentils.
