2 cups dried pinto beans, *soaked over night, rinse
1 tsp salt
1 bay leaf or 3-4 Mexican bay leaves

*Rinse beans in colander to remove dirt, bad beans, or small rocks. Put beans in medium bowl, cover with water. Set aside on counter.

In large pot add 6 - 8 cups water. Add bean, salt, and bay leaf. Cook on medium-low heat until the beans are soft, 3-5 hours. Add water as needed to keep from burning. They need to have a lot of liquid when their done.

I make a lot of frijoles at one time. In Mexico they serve them daily. They can be kept in the refrigerator for one week or refried and frozen for up to 2 months.
