Red Beans and Dirty Rice with Andouille Sausage Recipe

Ingredients: 1 package of Johnsonville Andouille Sausage (you can use one or both of the sausages depending how much spiciness you like) 1 green pepper diced 1 large onion diced 1 tbs minced garlic 1 can dark red kidney beans 1 can pinto beans 1 can diced tomato with onion or plain Chicken stock or water (if needed) 1 cup rice (any kind you like) I use one that is a mixture of several different kinds ˝ tsp salt

Directions:Preheat a large sauté pan with2 tablespoons olive oil. Slice sausage into ˝ in pieces and put them in the preheated pan and let them brown (and flavors the oil) Add the diced onion and green pepper and garlic. Cook over medium high heat for 5 minutes stirring frequently. Add the kidney beans, pinto beans, and diced tomato all undrained. Bring to a low boil and add the rice, stirring well. Lower heat and cover and let rice cook for about 20 minutes or whatever your rice directions say. Stir and if needed add a bit of chicken stock or water. One suggestion would be to sprinkle some sharp cheddar on top for serving. |
