Walnuts- 1 lb. ground
Sugar- 3/4 cup
Lemon- 1- grated or if you prefer zest
Almond extract- 1 tsp
Honey- 1/3 cup
Cream- 2 Tbs

Dough
Milk- 1/4 cup scalded and cooled
Yeast- 1 oz
Sugar- 2 Tbs

Flour- 4 cups
Butter- 1 cup softened
Egg yolks- 4
Sugar- 2 Tbs
Sour cream- 1 cup

Egg- 1
Water-1 Tbs

For the dough- DO THIS THE NIGHT BEFORE!
Heat the milk to scald, let cool to "warm" then add the sugar and yeast. Mix well. Set aside.
Mix the flour, butter, and sugar as for a pie crust ( I use a pastry cutter) Add the egg yolks, sugar, sour cream, and yeast mixture. Mix well. This does take some effort but you should get a nice soft ball of dough. Wrap the dough in waxed paper and place in refrigerator over night.
Next day-
Mix the filling ingredients and set aside.
Divide the dough into quarters.
Roll out one quarter at a time on a floured sheet or board to about 1/8 in thickness
I try to roll them into a rectangle formation
Next drizzle the dough with a Tbs of honey. You can add a handful of white raisins if desired then spread the nut mixture (1/4 of the mixture) evenly to about 1/2 inch from the edges
Now start at one end to roll the dough. Pinch the ends to keep filling from spilling out
Place on greased cookie sheet.
Repeat this process for the next 3 rolls.
The nut rolls must raise now for at least 1 hour.
Brush each nut roll with the egg & water mixture
Bake in oven at 350 degrees for about 30 minutes

Set out to cool on wire rack. When cooled you can wrap each in foil. These freeze wonderfully for later eating!
