2 smoked cod fillets
1 cup milk
A few black peppercorns
1 small sprig parsley
2 cloves garlic minced
1 bay leaf

Sauce
50gm butter
3/4 cup milk
2 tbsp. flour
Salt & pepper to taste
2 tbsp. chopped fresh parsley or 2 tsp dried.

You need a deepish pan for this. Put in the milk, garlic, parsley, peppercorns and the fish, bring to the boil, reduce heat to a simmer and cook until the fish is soft and opaque (about 5 minutes). Remove fish and keep warm. Strain the liquid and reserve about 11/2 cups of the poaching liquid. Meanwhile in a saucepan heat butter then add flour and stir until you have a paste. Add the milk and sufficient of the reserved liquid until you have a thick sauce. Add parsley and season to taste.
Serve with mashed potatoes and green beans.

Smoked cod or hake or haddock is a very under-rated fish. that deserves a better understanding. It is relatively cheap and always poaches well. Give it a try.
