1 C sugar in the raw
2 tsp salt
1.5 tsp ground cinnamon
1.5 tsp coarsely ground black pepper
1 tsp cayenne pepper
3 cups pecans
3 cups almonds
2 eggs
wax paper
butter for greasing

Directions:
Directions:

Preheat oven to 315. Mix together all spices and sugar in a separate bowl. Grease 2 cooking sheets with butter. Beat 2 egg whites until frothy. Add 6 cups nuts. Stir together nuts and egg whites until nuts are well coated. Add spice mix, stirring while adding. Spread out mixture in a single layer on cookie sheets. Bake 10 min. Stir. Bake 10 more min. Stir. Bake 5 more minutes. Spread nuts on wax paper to cool. Separate nuts that are stuck together while the mixture is still warm -- they are harder (but not impossible) to separate once they have cooled. Keep in an airtight container.
