1/2 c. butter (unsalted)
1 1/4 c. sugar
1/2 tsp. salt
2 eggs
2 c. flour
2 tsp. baking powder
1/2 c. buttermilk
1 pint blueberries, rinsed & drained & patted dry.
2 Tbsp. sugar

Directions:
Position rack in middle of oven. Preheat oven to 375 degrees. Spray inside of muffin pan with nonstick coating. Line with paper liners.
Cream together butter and 1 1/4 c. sugar and salt until light & fluffy. Beat in eggs one at a time. Mix together 1 3/4 c. flour and baking powder. Beat in flour mixture alternating with buttermilk just until mixed. Mix whole blueberries with remaining 1/4 c. flour and f old into batter. Scoop into muffin cups. Sprinkle tops lightly with sugar. Bake for 30 minutes or until golden brown and tops spring back.
