¼ c. chopped onion
¼ c. chopped bell pepper
2 tsp. vegetable oil
1 lb. lean ground beef
Salt and pepper to taste
4 hot baked potatoes
2 Tbsp. milk
1 c. shredded cheddar cheese
2 Tbsp. melted butter

Directions:
Directions:
Sauté onion and pepper in oil in large skillet for 5 minutes. Add ground beef and cook until meat loses its pink color, about 5 minutes. Drain fat. Season with salt and pepper.

Halve baked potatoes lengthwise and gently scoop out the pulp leaving the shells ¼” thick. Mash potato pulp, milk, cheese, and more salt and pepper to taste. Spoon meat mixture, equally divided, into potato shells, packing down lightly. Mound the potato mixture, equally divided, over the meat. Drizzle butter over the tops of the potatoes. Bake in shallow pan at 475º for about 15 minutes or until heated through and lightly browned.
