8 oz. Shrimp
5 garlic cloves
.6 oz piece of ginger
1/4 tsp. red pepper flakes
1 cup chicken broth
1 lime
1.5 pkg. ramen noodles
3 oz. baby bok choy
1 carrot
1 red bell pepper
2 green onions
1/8 cup chopped cilantro
broth flavoring**

1.5 T. soy sauce
1.5 T. rice vinegar
3/4 T. fish sauce

Wash and dry produce. Mince garlic. Grate ginger to make 1/2 T. Thinly slice small carrot and small bell pepper (1/2 if large). Roughly chop the boy choy, discarding root ends. Thinly slice green onions, separating the green from white parts. Quarter the lime. Pat Shrimp dry and season with salt and pepper.

In a medium pot, heat 2 tsp. olive oil over medium heat. Add the garlic, ginger and desired red pepper flakes. Cook mixing constantly for 1 min. Add 2.5 cups water, chicken broth and broth flavoring. Stir and bring to boil.

Add the bok choy to the broth and cook for 5-7 min. Add carrots, peppers and onion whites. Cook another 5 min or until veggies are tender and broth is reduced by about 1/4. Squeeze in juice of 1/4 lime.

Add shrimp and 1.5 packages of ramen noodles to soup (don't use ramen flavor packets, just noodles). Turn heat to med. high. Cook for 5 min or until shrimp are just pink and cooked through. Taste, and season with salt and pepper to adjust flavor.

Just before serving, stir in cilantro and green onion slices. Serve soup and noodles in deep bowls, squeeze some lime juice in for added flavor. Enjoy!
