For the crust:
1 1/2 cups graham cracker crumbs- ( I buy regular graham crackers and crush them myself, because I like the texture)
1/4 cup butter-1 cube , melted
1/3 cup powdered sugar

Cheesecake part:
3-8 ounce packages of cream cheese at room temperature
4 eggs at room temperature
1 teaspoon vanilla
1 pint of sour cream at room temperature
Topping of choice- ( I usually use fresh fruit)

Heat oven to 350'.

Crust:
Combine graham cracker crumbs, powdered sugar, and melted butter. Press into bottom of an 8-inch spring form pan. (I usually spray the bottom of pan as well as adding parchment paper cut to size of pan, makes it easier to get out.

Cheesecake:
In a large bowl, beat cream cheese, eggs, sugar,
and vanilla until smooth. Pour mixture over pre-pared pie crust.


To minimize cracking, place a shallow pan of hot water in lower part of the oven during baking.

Baking:
Bake at 350' for 50 minutes (until the center is set). Remove from oven and spread the sour cream on top of cake. Return to oven and bake an additional 5 minutes. Remove from oven and allow to cool. If using a can topping, spread on now.

The most important part of this is to completely refrigerate over night. If using fresh fruit, garnish when serving.
