1 1/2 lb. beef stew meat
1/4 c. flour
1/4 tsp. salt
olive oil
1/2 c. baby carrots
2 large potatoes, cubed
1 1/2 tsp. parsley
1/2 tsp. black pepper
2 c. boiling water
1 package dry onion soup mix
1 1/2 medium onions, sliced
1 tbsp. butter
red wine

In a large bowl or plastic bag, combine stew meat with 1/4 c. flour and 1/2 tsp. salt.

Heat olive oil in a large skillet and brown coated beef cubes. Add wine to de-glaze pan. Transfer to slow cooker along with carrots, potatoes, parsley, and pepper. Saute onions in butter until soft and add to slow cooker.

In a small bowl, combine 2 c, boiling water and soup mix. Pour into slow cooker.

Cover and cook on High for 30 minutes. Reduce heat to low and cook for 6 hours
