12 medium jalapeno peppers
12 large raw shrimp, peeled and deveined, tails intact
Kosher salt
1 -8 ounce package of cream cheese
1 1/2 cups all purpose flour
3/4 cups cornstarch
1 teaspoon old bay seasoning
1 cup Lager-style beer
Vegetable oil for frying
Malt vinegar for serving, ( I don't use it, just because I don't care for it, I use cot tail sauce, or ranch dressing)

Cut the tops off of the jalapenos and scoop out the seeds. Pat the shrimp dry and generously season with salt. Insert a slice of cream chees and 1 shrimp into the jalapeno pepper, leaving the tail sticking out.

Whisk 3/4 cup flour,the cornstarch, Old Bay, and beer in a medium bowl until smooth; set aside. Heat 2 inches of vegetable oil in a large pot or Dutch oven on medium heat until a thermometer registers 350'. ( I use a Dutch oven or a large deep pot). Whisk the remaining 3/4 cup flour and 1/2 teaspoon salt in a shallow bowl.

Working in batches,dredge the jalapenos in the flour shaking off excess, then dip in the beer batter, coating whole thing completely. Fry, stirring occasionally, until the shrimp are cooked through and jalapeno's are golden and crisp, about 5 minutes. Remove with a slotted spoon and drain on paper towels; season with salt. Serve with malt vinegar or your favorite side.

When I make this recipe, I normally make 2 or 3 batches, they go very quickly, and I usually ,make it around holidays and of the course the "Super Bowl". This original recipe came off of the Food Net Work Channel.
