1/2 lb. ground beef
1/2 lb. ground Italian sausage (mild or hot according to taste)
1/4 cup dry wine
Olive oil
Kosher salt
Black pepper
1 medium onion, chopped
1 package large shells
1 15oz. whole milk Ricotta cheese
3 1/2 c. shredded Mozzarella cheese
1 c. grated Parmesan cheese
2 tbsp. chopped parsley
3 tbsp. chopped basil
3 cloves finely chopped garlic
4 c. Marinara sauce

Preheat oven to 350º.

Meat mixture:

In a large heated skillet, drizzle olive oil. Add beef, sausage, and onion to brown with salt and pepper to taste. Cook for approx. 10 minutes until browned and onions are translucent. Add wine to de-glaze skillet. Keep stirring until wine evaporates completely. Put in a large bowl and allow to cool (must be cooled before adding any cheese mixture).

Pasta:

Cook shells in boiling water with 1 tbsp. olive oil for 4-5 minutes (they will continue to cook in the oven). Drain and cool on a baking sheet.

Cheese and Herb mixture:

In a large bowl, combine Ricotta, 2 c. Mozzarella, 1/2 c. Parmesan, parsley, and basil. Then add garlic with salt and pepper to taste.

Final steps:

Combine meat mixture with cheese mixture. Brush olive oil on the bottom of a 13X9 baking dish.
Pour 1/2" marinara as a base layer. Stuff each shell until full and place in marinara. When all shells are stuffed and placed, top with remaining sauce. Sprinkle with remaining Mozzarella and Parmesan.

Bake uncovered at 350º for 30 minutes. Let stand for 5 minutes before serving.
