2 cups elbow macaroni
3 T. butter
1/4 medium onion, finely chopped
1/2 garic clove, minced
2-1/2 T. all-purpose flour (spooned and leveled)
1-1/2 cups whole milk
Dash of ground nutmeg
1 lb. coarsely chopped cooked lobster, shrimp, crawfish, or crabmeat, or a combination
2 cups mixed grated cheeses, such as parmesan, cheddar, swiss, and fontina
1/4 cup panko bread crumbs
1/4 tsp. Emeril's Creole Seasonings

Preheat oven to 400º. In a large pot of boiling salted water, cook macaroni 2 minutes less than al dente. Drain, rinse with cold water and set aside.
While pasta is cooking, melt butter over medium heat in a large saucepan.
Transfer 1 T. of melted butter to a medium bowl and reserve. Add onion and garlic to the pan and cook until softened 3 to 5 minutes. Add flour and cook stirring for 1 minute. Add milk and whisk until smooth. Bring to a boil and then reduce heat to a simmer and cook until thickened about 2 to 3 minutes. Season with 1/4 tsp. salt, 1/4 tsp. pepper and nutmeg.
Remove from heat. Fold in seafood, macaroni and cheeses. Transfer to a shallow 2-quart baking dish. To bowl with the reserved melted butter add the panko bread crumbs and Creole seasoning. Toss and scatter over the macaroni mixture. Place baking dish on a rimmed baking sheet. Bake until topping is golden and sauce is bubbling, about 15 to 20 minutes. Let cool for 5 minutes before serving.

I make this using crab meat, you can purchase it at Walmart in a can, or you can really go all out and cook about 1-1/2 to 2 lbs. crab legs and chop up the meat and use that. Recipe can be doubled. Reheats very well.
