1 cup packed brown sugar
1/2 cup sugar
3/4 cup vegetable shortening
1/4 cup water
1 egg
1 tsp vanilla extract
3 cups quick oats
1 cup flour
1/2 tsp baking soda
3/4 cup raisins or chocolate chips

Directions:
Directions:
Preheat oven to 350ºF. Lightly grease cookie sheet. Beat sugars, shortening, water, egg and vanilla until creamy. Combine oats, flour, baking soda and 1 teaspoon salt, if desired. Add to shortening mixture; mix well. Stir in raisins or chocolate chips. Drop by rounded teaspoonful onto greased cookie sheet. Bake 12 to 14 minutes or until light golden brown. Let stand 1 minute before removing to racks to cool.

Mom says this is a favorite of many people and it just came from the quick oats container. I've even added coconut or butterscotch chips and I bet peanut butter chips would be great too.
