2 eggs, slightly beaten
1/2 c. sugar
1 T. grated lemon rind
1/2 c. lemon juice
1 T. margarine
1/8 tsp. salt.
1 c. grated coconut
2-1/4 c. flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. margarine
1 c. sugar
1 egg
1/4 c. molasses

Preheat oven to 350º. Need ungreased cookie sheet(s).

In a sauce pan, combine 2 slightly beaten eggs, 1/2 c. sugar, 1 T. grated lemon rind, 1/2 c. lemon juice, 1 T. margarine, 1/8 tsp. salt. Cook over low heat, stirring constantly until thick. Remove from heat. Add 1 c. grated coconut and cool.

Sift 2-1/4 c. flour, 1 tsp. cinnamon, 1/2 tsp. baking soda and 1/4 tsp. salt.
Cream 1/2 c. margarine. Add 1 c. sugar and cream well. Stir in 1 unbeaten egg and 1/4 c. molasses. Blend in dry ingredients. Chill dough.

Sprinkle granulated sugar on counter baking surface.
Divide chilled dough into four (4) parts. Shape each portion of dough into a 13"x4" strip. Spread 1/4 of filling down the center of each strip. Fold over each side of strip towards center of strip. Cut diagonally into bars. Place on ungreased cookie sheet.

Bake in 350º oven for 12-15 minutes.
