16 oz. pumpkin (if using fresh pumpkin, drain well)
2 tsp. baking soda
4 c. all-purpose flour
2 c. Quaker Oatmeal
1 tsp. cinnamon
1 tsp. salt
1-1/2 sticks margarine
2 c. brown sugar
1 c. white sugar
1 egg
1 tsp. vanilla
1 c. semi-sweet chocolate chips

Directions:
Directions:
Preheat oven to 350º. Grease cookie sheet(s).

In large bowl, combine: pumpkin, baking soda, flour, oatmeal, cinnamon, salt, margarine, brown sugar, white sugar, egg and vanilla. Mix well.
Stir in chocolate chips.

Using an ice cream scoop, scoop out cookie dough and arrange on greased cookie sheet.
Bake in 350º oven for 15 minutes or until cookies are light brown, time may vary.
Once cooled, store cookies in air tight container.
