1 1/2 lbs top beef or sirloin, 3/4" thick
1/4 C salad oil
1 C water
1 medium onion
1/2 tsp garlic salt or 3 minced garlic
1/4 tsp ginger or "a thumb" sized piece of ginger peeled and minced
2 medium green pepper cut into 3/4" strips
1 Tbsp cornstarch
2-3 tsp sugar, if desired
2 Tbsp Soya Sauce
2-3 medium tomatoe wedged

Hot cooked rice

Directions:
Directions:
Trim excess fat.
Cut meat into 2"x1/4" strips
Heat oil in skillet and add meat.
Turn frequently until evenly browned, approx. 5 mins.
Stir in water, onion, garlic/garlic salt, ginger.
Cover and simmer 12-15 mins for round steak and 5-8 mins for sirloin steak.
Add green pepper during last 5 mins. of cooking.

Blend cornstarch, sugar, soya sauce and mix into meat mixture, stirring constantly until mixture thickens and boils.

Cut tomatoes into 1/8ths. Place on top of meat mixture.
Cover and cook on low heat for about 3 mins.

Serve over rice.
