1 lb. hamburger
2 russet potatoes grated
Taco seasoning
16 oz. grated cheddar cheese
12 taco shells
Chopped tomatoes as needed
Shredded lettuce as needed
Salsa

Directions:
Directions:
Fry hamburger in a fry pan, drain grease. Mix grated potatoes in with hamburger add taco seasoning and enough water to simmer. Bring mixture to a boil, reduce heat to simmer for an hour or until potatoes are cooked through. Place aluminum foil in 9 X 13 casserole dish, place taco shells in. Add cheese to each taco shell, add meat & potato mixture to each shell. Cover with aluminum foil and seal edges. Place in 350 oven, bake for 45 minutes. Garnish with more grated cheese, lettuce, tomatoes and salsa, serve and enjoy.

This recipe comes from a dear family friend Millie Kay Fivas Montoya, she got the recipe from her husband's family. Cheri's family loves this recipe and we even make a batch without the beef for Cheri.
