2 boxes frozen spinach, thawed and well drained, blotted with paper towels
1/2 c. celery, finely chopped
1/2 c. onion, finely chopped
3/4 c. Old English Cheese, cubed very small
3 hard boiled eggs, finely chopped

Sauce:
1/2 tsp. salt
1 1/2 tsp. white vinegar
1/2 tsp. Tabasco
1/1/2 c. mayonnaise

Horseradish on the side

Toss lightly the first 5 ingredients. Mix together the "sauce" ingredients and fold in.

Garnish with chopped egg yolk. Spoonful of horseradish on the side.
