6 c. All Bran cereal
2 c. boiling water
1 qt. nonfat buttermilk
2 c. sugar (can use 1 1/2 c. or less)
1/2 c. applesauce
1/2 c. oil
4 eggs
5 c. flour
5 tsp. baking powder

Optional add-ins: grated coconut, raisins, dried cranberries, dates, nuts, grated carrots, chopped apple. We prefer coconut, raisins, and cranberries.

Combine cereal and boiling water in very large bowl. Let stand til it cools some, add buttermilk, and stir. Add sugar, oil, applesauce, and eggs. Stir until mixed. In separate bowl, stir flour and baking soda together, either stir or sift into wet ingredients. Stir in add-in ingredients as desired. (Continued next page.)

Spoon into sprayed muffin pans, bake @ 350º until light brown and top springs back. This make a LOT of muffins, probably about 48. You can cut recipe in half or keep batter in fridge and bake in a day or so.
