Casserole:
1 - 32 oz. package. hash browns
1-1/2 c. sour cream
1/2 c. butter, melted
2 c. grated cheddar cheese
1/2 c. onion, finely chopped
1 can Cream of Mushroom or Cream of Chicken soup
Salt and Pepper to taste
Topping:
2 c. corn flakes, crushed
1/2 c. butter, melted

Directions:
Directions:
Preheat oven to 350º. Grease a 9"x13" pan with vegetable oil.
Casserole:
Mix together the hash browns, sour cream 1/2 c. melted butter, cheese, onion, soup, salt and pepper.
Pour mixture into a 9"x13" greased baking pan.
Topping:
Mix crushed cornflakes with 1/2 c. melted butter. Sprinkle over top of the potato mixture.

Bake in 350º oven for 1 hour.

Personal Notes:
I prefer using Cream of Chicken soup in the potato mixture.
I usually use more than the 2 c. crushed cornflakes called for. Experiment to find the amount you enjoy.
