1 1/2 lbs, ground beef
3 Tbs. butter
2 onions chopped
1 clove garlic, crushed fine
1/4 cup parsley chopped
1 cup tomato sauce
1/2 cup red wine
1/4 tsp. sugar
1 cup fine bread crumbs
1 cup Kasseri or Mezethra cheese
salt and pepper to taste
3 or 4 eggplants, med. size

Directions:
Peel eggplants, cut into 1/4 inch slices, and salt them well. Let them drain on paper on paper toweling, blotting excess water off top. Fry each slice until golden and set aside. Eggplant slices may also be broiled, brushiung them with melted butter, this way they arent so greasy.

In saucepan brown onions, garlic, ground beef and simmer for 10 minutes. Add parsley, tomato sauce, wine, sugar, salt and pepper and cook for 15 minutes or until thickened.

Arrange layers of eggplant in a greased 9 x 12 inch baking pan, alternately with meat mxture and bread crumbs, and grated cheese. Pour crema suce over top evely and bake in oven at 350 for 40 minutes, Cool slightly before serving.
