1lb 93% lean ground beef
2 egg whites
1 medium uncooked onion
1/2 tsp chili powder
1/4 tsp ground cumin
4oz canned green chili peppers
1 cup mild enchilada sauce
2 oz dry cornbread stuffing mix

Directions:

Preheat oven to 375º
Line shallow pan (I use my broiler pan) with foil
Spray a roasting rack with nonstick spray, you can place loaf directly on foil, but it I prefer
the rack so that oil drips off
Reserve half of enchilada sauce for topping. Mix the rest of ingredients together.
Shape into loaf, it will be wetter than most meatloaves.
Gently place into rack and then place rack on foil lined pan.
Bake one hour
Pour remaining sauce over meatloaf and bake another five minutes

This goes great with the Mexican Rice recipe in this book.
I made this most of the time with ground chicken breast. It made a great low point food for weight watchers.
