5 c cooked spaghetti squash, drained of excess moisture
1 c canned crushed tomatoes
1/4 c grated parmesan cheese
1/4 c chopped fresh basil
1/2 tsp Italian seasoning
1/2 tsp salt
2 c chopped portabella mushrooms
2 c chopped zucchini
1 c chopped red bell pepper
1 tsp chopped garlic
1/4 c plain greek yogurt

Place spaghetti squash in lg microwabable bowl. Reheat if needed and cover to keep warm. In med bowl, combine crushed tomatoes, parmesan, basil, italian seasoning and salt. Mix well. Bring lg skillet sprayed with nonstick spray to med-hi heat. Add mushrooms, zucchini and bell pepper, cooking and stirring for 5 min. Add garlic to skillet. Cook and Stir until veg have softened and garlic is fragrant, about 2 min. Reduce heat to low. Add seasoned crushed tomatoes, cooking and stirring 3 min. Remove from heat and stir in yogurt. Add skillet contents to large bowl of spag squash and mix well.
