Choice of dry seasonings

Preheat oven to 400 deg.

Trim excess fat and sinew from the pork tenderloin. Season with dry seasoning of your choice (Greek seasoning, Cajun, or just even salt, pepper and garlic). Sear on all sides over medium-high heat (about 7 minutes).

Transfer to a roasting pan (I like to have it on a rack). Roast in oven for about 12 minutes per pound for medium-rare. Serve alone or with a sauce of your choice. Good mustard sauce in this book.
