12 Tbsp. unsalted butter, softened
6 large egg yolks
1/2 cup boiling water
2 tsp. lemon juice
1/8 tsp. cayenne pepper

Directions:
Whisk butter and egg yolks together in a large heatproof bowl, set over medium saucepan filled with 1/2 inch simmering water, making sure the water does not touch the bottom of the bowl. Slowly add boiling water. (It's a good idea to boil 1 cup boiling water and then dip out 1/2 cup for the recipe). Cook, whisking constantly until thickened, about 7-10 minutes. Remove from heat. Stir in lemon juice and cayenne pepper. Season with salt to taste.

Can be refrigerated up to three days. To reheat, microwave at 50% power, stirring every 10-15 seconds, until heated through, about 1 minute.
