Dressing:
Juice from 1/2 a lemon
1/4 cup olive oil
1/8 tsp ground cumin
1/8 tsp curry
drop of tabasco, hot sauce or pinch of red pepper
pinch of garlic powder (or 1 clove fresh minced or crushed garlic)
salt & pepper to taste

Salad:
1 1/2 cup chicken broth
1 cup instant couscous
meat from 3 lb rotisserie chicken cut into bite sized pieces (or 2-4 boneless, skinless chicken breasts, coated with additional above dressing and broiled)*
1 tomato, diced and seeded of desired
3 green onions, chopped
1/2 cup drained canned chick peas
1/2 red bell pepper, chopped into large pieces
1/3 cup raisins
1/3 cup toasted pine nuts (or other nuts in a pinch; either is optional)

Directions:
Directions:
Make dressing by whisking ingredients together. Set aside.

Bring chicken broth to a boil, add couscous and stir. Cover and remove from heat; let stand 5 mintes. Tansfer to a large bowl. Toss with dressing and other ingredients. MIx well. Served warm or chilled.

For vegetarian version: cook couscous with white wine, half wine haf water, or halk wine half vegetable broth. Do not add chicken but add extra small tomato and red pepper. If desired, serve chicken as a side.

*merguez sausage is a good substitute. Also good vegetarian.
