4-5 lbs fresh small beets, 40-48, stems removed
1 1/2 cups white sugar
2 tbsp pickling salt
3 cups white vinegar
1 cup water

Directions:
Wash beets and remove stems, In a large boiling pot of water, cook the beets until barely tender. Remove from stove, Submerge the beets in a large bowl of ice water. Cut off the tops and the roots completely, then remove the skin. Peel and slice beets into 1 inch chunks.

Combine the vinegar, sugar, water and pickling salt in a nonreactive pot and bring mixture to a boil, reduce heat and simmer for 10 minutes. Add the beets to the liquid and return to a boil. Carefully ladle the beets and liquid into hot sterilized jars, leaving a 1/2 inch headspace.
Remove any air bubbles with non-metal utensil. Add additional pickling juice if necessary to keep headspace.

Wipe rims with a clean, damp cloth. Seal the jars and process for 35 minutes in a boiling water bath.
