8 slices crispy cooked bacon
1 cup shredded swiss cheese
1/3 c. finely chopped onion
4 large eggs
2 c. half and half
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground red pepper (cayenne)

Pie crust for 9" pie

Directions:
Directions:
Heat oven to 425º F. Put pie crust in bottom of 9" pie pan. Bake for 10 minutes.
Reduce oven temperature to 325 ºF. Sprinkle bacon, cheese and onion on to pie crust. In medium bowl beat eggs, slightly. Beat in remaining ingredients. Pour over cheese and bacon.
Bake 45-60 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
