2 1/2 pounds Ground Chuck,
large onion diced,
2 stalks celery diced,
3 cloves garlic minced,
1 (14.5 0z) can diced tomatoes
3 cups beef broth or more if needed,
1 yellow pepper diced,
1 green pepper diced,
1 red pepper diced,
4 carrots peeled and diced,
5 red potatoes cut into chunks,
3 Tablespoons tomato paste,
1/2 tsp Kosher salt,
1/2 tsp black pepper,
2 tsps. dried parsley flakes,
1/2tsp Ground Oregano,
1/4 tsp Cayenne Pepper or more

Directions:
Directions:
Brown meat with onions ,celery, garlic and peppers, until meat no longer pink, drain off fat. Add Potatoes, broth and tomatoes and tomato paste and simmer until potatoes are done.
If too thick just add more broth or water.
I personally always cook my potato and carrots and celery while meat and peppers and onions are browning so then all you have to do is drain meat add the broth and tomatoes use water from cooking the vegetables along with the beef broth and it is all done at once
