2 - 10 oz pkg chopped spinach
2 C Pepperidge Farm Dressing (crumbs)
1 lg onion
6 beaten eggs
1/2 C melted margarine
1/2 C shredded Parmesan cheese
1 tsp garlic salt
1 tsp pepper
1/2 tsp thyme

Cook spinach, cool, drain well
Blend all ingredients together and chill
Make balls - 1 tsp or more
Bake 15 - 20 minutes on a greased cookie sheet at 350º

Most guests who've had these like them. They are the basis for a long standing family joke, though, since my brother-in-law Tim disliked them so much when he tried them that he hid his beneath the couch to avoid having to eat them. I haven't gotten that reaction since, but I haven't served them to Tim since either! ;-)

To make these ahead of time, freeze the balls before baking. When ready, thaw them before baking.
