All measurements are approximate to taste:
3-5 garlic cloves
1 large yellow onion
1 green pepper
3 tablespoons olive oil
2 tablespoons oregano
2-3 bay leaves
1 cup of red wine
2-3 large cans of whole peeled tomatoes blended (in the food processor)
1 small can tomato paste
1 tablespoon sugar
Fresh ground lack pepper

Directions:
Directions:
Dice garlic cloves, put salt on them to bring out the flavor.
Dice the onion and green pepper.
Sauté the garlic, onion and pepper in olive oil (don't be shy with the olive oil) on medium heat until the onions are translucent.
Add oregano and bay leaves and let cook for about 2 minutes.
Add wine and let it cook down for about 5 minutes.
Add tomatoes, tomato paste, sugar, and fresh ground black pepper to taste.

Let it simmer on low for a while - about one or two hours (add olive oil and/or wine for taste and consistency).
If you want meatballs or sausage, they're a little better if they cook in the sauce, but you may want to partially cook them before adding them to the sauce to get some of the grease out.
