4 c. cooked rice
2 tbsp. sesame oil
1 c. frozen peas & carrots
2 tsp. onion powder
2 tsp. garlic powder
1/4 c. soy sauce
2 eggs, slightly beaten w/ salt & pepper
1/2 c. frozen corn

Directions:
Directions:
On medium/ high heat, heat the oil in a large skillet. Add peas/carrots/corn mix, onion & garlic (powder or fresh). Stir fry until tender. Lower the heat to medium low and push the mixture off to one side of pan, then pour your eggs on the other side of skillet and stir fry until scrambled. Add the rice and soy sauce (or sauce of choice) and blend all together. Stir fry until thoroughly heated. Makes 4 servings.

Goes great with homemade honey soy sauce and chicken or shrimp would taste great with it too.
