4 small zucchini's
1/4 cup parmesan cheese, grated
cherry tomatoes, halved
olive oil
fresh chopped basil
salt and pepper

Directions:
Directions:
Preheat oven to 350ºF Cut the zucchinn's lengthwise, scoop out some of the insides until you have a 1/4 inch trough.
Brush the zucchini inside and out with a little olive oil, then place cherry tomato halves along the zucchini boat. Sprinkle with cheese, top with salt and pepper.
Bake throughly for 25 minutes, or until the zucchini is tender. Top with fresh basil.
