Sauté first 3 ingredients together. Drain excess grease.

1 C Bacon browned
1 Onion diced
5 Red potatoes chopped

2 C Celery chopped

1 C Cooked Shrimp bite size
1 C Cooked Lobster bite size
4 C Grind Razor Clams , Add in at the very last.


2 C Courtbouillon--homemade (I make a big batch and freeze in 2 C containers)

Combine water, Old Bay seasoning, carrots, celery, leek, lobster shellls, clam shells, shrimp shells, white wine (dry white Riesling) simmer together, strain through cheese cloth. Use 2 cups of broth in Chowder.

Lemon White Sauce

˝ C Flour 4 T Chilled butter
˝ T Sea salt 4 T Lemon juice
˝ T Ground black pepper 2 C Hot milk
˝ tsp Lemon pepper 2 C Hot heavy cream

Directions:
Directions:
1. Mix flour, salt, pepper, and lemon pepper in bowl until well blended.
2. Add the chilled butter and lemon juice to the skillet. Cook and stir until the butter is melted. Gradually whisk in the seasoned flour; cook and stir for 5 minutes. Stir in the hot milk, whisking constantly until the sauce has thickened, about 5 minutes more. Add heavy cream and 2 cups Courtboullion. Whisk together until well combined.
3. Add in bacon, onion, potatoes, celery, shrimp, and lobster. Bring to boil, add clams, turn stove down to medium heat, and cover with lid. Continue to let flavors blend for 15 minutes.
4. Serve Stouder Chowder in individual bowls with your choice of garnish. I love Cilantro and Lemon!
