3 eggs, well beaten
¾ cup milk
2/3 cup flour
butter
¼ cup chopped onion
¼ cup chopped celery
¼ cup chopped green pepper
½ cup flour
1 can chicken broth
1 cup light cream or milk
1 tsp. curry powder
2 cup diced ham

Directions:

Beat eggs, milk and flour until smooth. Brush bottom of 6 inch skillet with butter. Spoon in 2 tablespoon egg batter, rotating pan to coat bottem evenly. Cook until outer edge is brown. Flip and brown other side. Make crepes until batter is used. Melt ¼ cup butter and saute onion, celery and green pepper. Stir until tender. Sprinkle with flour and stir until smooth. Gradually stir in chicken broth, cream and curry powder. Stir until sauce thickens. Fold in ham. Spoon ¼ cup cooled filling onto each crepe. Roll up and place in heavily buttered shallow casserole dish. Bake at 400 degrees for 15-20 minutes.
