1 head of cauliflower, cut into florets
1 1/2 lbs bacon, cut into 1/2" pieces
1 lb shrimp, peeled and deveined
2 large carrots, peeled and diced
4 stalks of celery, diced
1 yellow onion, chopped
2 garlic cloves, chopped
1 tsp garlic powder
1 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt ( may use less as bacon has a lot of salt in it)
6 c chicken broth
2 bay leaves
1/4 c fresh parsley, chopped

Steam cauliflower and set aside. Place a large saucepan over medium heat. Add bacon and cook until crisp. Remove bacon from the pot and place on paper towels. Leave 2-3 tbsp of bacon fat in the pot. Pat shrimp dry and add to the pan. Cook until pink on both sides, approximately 2-3 min. Once cooked, remove from the pot. Set aside. Add carrots, celery, onion and garlic cloves to the pot. Scrape bottom with a wooden spoon to remove left over bacon. Once the onion has come translucent, add garlic powder, paprika, oregano, thyme and salt. Stir for 1 min in the veggies. Add broth and bay leaves to the pot. Add cauliflower to a high speed blender until smooth. Scoop the cauliflower purée into the pot along with half of the bacon. Cover and cook for 15 min. Remove the. At leaves. Add parsley and use an immersion blender to purée soup until smooth. You can also put it into the blender and purée. Add shrimp back into the pot. Add bacon as a garnish for the soup.
