1 lb. turkey cutlets (6)
2 tsp. flour
1/4 tsp. salt and pepper
3 tsp. olive oil
1 lb. mushrooms, sliced
1/4 c. shallots, chopped
3/4 c. chicken broth
1/2 c. dry white wine
1 tsp. cornstarch
1 tbsp. water
1 tbsp. parsley

Directions:
Directions:
Pound cutlets. Mix flour, salt and pepper in a plastic bag. Saute cutlets in 2 tbsp. of oil. Remove cutlets and add remaining oil to pan. Saute mushrooms and onions, cooking 2-3 minutes. Add broth and wine. Heat on medium high to boil and slightly thicken. Dissolve cornstarch in 1 tbsp. water and whisk into sauce. Return cutlets and heat through on low to medium heat, about 20 minutes. Sprinkle with parsley and serve with crusty bread.
