2 T. canola oil
1 Red pepper
1 Green pepper
1 Yellow pepper
Salt
Pepper
4oz. cream cheese
1/2 c. Cheddar cheese
1/2 c. Pepper Jack cheese
6 chicken breast
2 tsp. chili powder
2 tsp. cumin
2 tsp. garlic

Directions:
Directions:
Saute the first 4 ingredients.
Add the cheese and mix.
Cut pocket in the chicken breast and coat with the last 3 ingredients.
Stuff pepper mixture into the chicken pockets.
Bake at 350º until done when center reaches 165 on a thermometer, or fry in a pan on each side for 5 minutes.
