fresh basil leaves - lots and lots (3 to 4 cups packed)
pine nuts
garlic
olive oil
Parmesan cheese

Directions:
Directions:
In blender or food processor chop basil leaves with small amount of olive oil.
Add pine nuts and garlic and chop.
Add Parmesan and enough olive oil to maintain a loose paste consistency.
Transfer to air-tight container, leaving 1/4 inch minimum. Float olive oil over the top to keep air off the pesto. Cap and refrigerate.

You would think you can make this with any herb you like. Pesto is great in salads, pasta, sauces, etc. Only limited by your imagination.
