5-6 0z butter
3 cups of mixed dried fruit (ie sultanas, currents, raisins)
1 cup brown sugara
1 teaspoons of mixed spice
1 teaspoon of bicarbonate of soda
1 cup water
2 eggs
1 cup of plain flour (sifted)
1 cup of all purpose flour (self raising flour) (sifted)
genrous slurp of brandy or sherry

Directions:
Directions:
Boil together butter, fruit, sugar, spice, bicarb soda and water and brandy or sherry; cool; add well-beaten eggs and finally flour. Grease and line base of cake tin (round or square). spoon mixture into cake tin.
Bake 45 mins in moderate oven. 350 degrees F

Tip: Test with skewer when skewer comes out clean - cake is cooked!
