4 pork loin chops, cut 3/4 inch thick
1 Tbsp olive oil
2 cooking apples, cored and thinly sliced
1 small red onion, cut into thin wedges
2 cloves garlic, minced
1/4 cup apple juice
1/3 whipping cream
1 Tbsp pure maple syrup
2 tsp snipped fresh thyme or 1 tsp dried thyme

Trim excess fat from pork chops. Sprinkle with salt and pepper. In a 12-inch nonstick skillet heat oil over medium-high heat. Add pork chops. Cook for 8 to 12 minutes, turning once halfway through cooking. Remove from skillet. Cover with foil. Let stand 3 minutes.

Add apples, onion, and garlic to skillet. Cook for 2 minutes, stirring occasionally. Add apple juice. Cook about 4 minutes more or until most liquid has evaporated and apples are crisp-tender.

Meanwhile, stir together whipping cream, maple syrup, and thyme. Pour over apples in skillet. Cook and stir 1-2 minutes or until heated through and sauce starts to thicken.

Serve apple mixture over pork chops. Sprinkle with additional fresh thyme, if desired.
