1 C cornmeal
1/2 C milk

1 1/3 C flour
2 1/2 t baking powder
1 t salt

1 egg
1 C milk

1/2 C butter
1/2 C white sugar

Directions:
Directions:
Preheat oven to 350º.
Grease or spray 8" square baking dish.

In glass measure add 1/2 cup milk and stir in cornmeal, set aside.

Stir flour, baking powder and salt in another bowl.

Stir together egg and milk in another bowl.

In mixer bowl cream butter and slowly add sugar to creamy consistency. Alternately stir in the flour mixture and then the egg/milk mixture until well combined.

Blend in cornmeal. Pour into prepared pan.

Bake for 40-45 minutes until lightly brown.

It may seem like this recipe has too many steps, it is all in the preparation. It goes together very smoothly and is worth the extra steps. This cornbread is good hot with butter and maple syrup or crumbled into Cornbread dressing served with Roasted chicken.
