1 medium onion chopped
1 medium green pepper, chopped
1/4 c. butter or margarine
2 c. diced cooked potatoes.
2 c.diced cooked chicken, skinned
1/2 - 1 1/2 c. Picante Sauce
1 tsp. cumin (do not omit this)
1/2 tsp. salt
1 c. shredded Monterrey Jack or Cheddar Jack Cheese
Tortilla scoops - optional

Directions:
Directions:
Saute onion and green pepper in butter, stirring occasionally.
Add potatoes, chicken, Picante Sauce, cumin and salt.
Simmer 5 minutes.
Top with cheese. Cover to melt cheese.
Serve with additional Picante Sauce and tortilla scoops.
