1 (6 - 8 lb.) standing rib roast (uncut prime rib)
freshly cracked black pepper

Have roast at room temperature. (see note) Preheat oven to 375º. Rub roast with cracked pepper. Do not add salt until ready to serve. Place roast on a rack in an open roasting pan, rib-side down. Roast exactly 1 hour. Turn oven off. but DO NOT OPEN OVEN! Allow roast to remain in oven for a minimum of 3 hours and a maximum of 5 hours. At the end of the 3 - 5 hours, turn oven to 375º and roast an additional 30 - 45 minutes (30 minutes for rare, 45 minutes for medium) DO NOT OPEN OVEN until all baking has been completed. Remove roast and allow to stand for 15 minutes before slicing. Serves 6 - 8 depending on appetites and menu.

NOTE: The secret to this roast is the temperature of the roast prior to cooking. it MUST be at room temperature. Depending on the temperature in your kitchen, the time required for warming a cold roast to room temperature varies greatly. Usually 4 - 8 hours is required in a 70º kitchen. Frozen roast takes much longer. A cold center will produce a very rare roast.
